Ideas for using smoked pork?

I have some lovely smoked pork that we had as sandwiches on buns last night.
But it seems to me that it would be good in a lot dishes...perhaps something oriental or mexican.
Any ideas?
 
Mix in some cilantro, lime, chopped tomatoes, sweet peppers if you want, and make wraps - with or without chili pepper flakes.

Cilantro, lime, fresh bean sprouts, soy sauce - same thing - wraps.

Or not wraps, just as a main dish.

This is the only thing that comes to mind right away.
 
Is it pulled, whole, chops . . . ? I'm guessing pulled, since you had sandwiches. If so, you can make a great sauce for pasta (like rotelli), or a topping for cous cous, or with Asian veg and spices over rice or Oriental noodles, or in brown gravy with carrots, onions, celery, et. al. over egg noodles.
 
porky quesadillias with cheddar cheese, lime, peppers, onions, and black beans.

Great for carnitas, with a little chimi churi.

Taquitos

As far as oriental, how about lettuce wraps. stir fry the pork with green onion, some pine apple, some hoisin sauce, and a little ginger. Serve with bib lettuce or blanched napa cabbage leaves and some plum sauce and cilantro.

OR make your own mush pork with it.?

I have a wonderful recipe for Asian noodles with a peanut lime vinaigrette sauce that is great for adding leftover pulled pork to.

NOODLES WITH PEANUT LIME VINAIGRETTE
Serves 4

1 lb cooked al dente, cooled thin pasta
2-4 scallions,chopped, save some for garnish.
1 red bell pepper, julienned, save some for garnish
Roasted peanuts, chopped, save all for garnish
Peanut-Lime Vinaigrette (recipe below)
Toss altogether & garnish with scallions, red bell pepper and peanuts.

Peanut and Lime Vinaigrette
1 T grated fresh ginger
2 cloves garlic, minced
1 serrano chili, chopped
3 T fresh cilantro leaves
1 1/2 T smooth unsalted peanut butter
3 T fresh lime juice
1 1/2 T rice vinegar
1 1/2 T soy sauce
1 1/2 tsp light brown sugar
2/3 cup canola oil
1 T sesame oil
Salt to taste
In a food processor, process everything except the oil. Then slowly drizzle the oil in until emulsified. Scrape into a bowl and wait for half an hour for the flavours to develop.

How about Posole, Constance? Pork, green chile, and hominy soup. I love it!

You can chop up your smoked pork. There are some wonderful posole recipes out there, but here's the first one I ever made - simple, but great.

POSOLE

1 1/2 lb pulled pork
2 TBL oil
1/2 Cup diced onion
2 cloves minced garlic
4 Cups chicken broth (unsalted, if you have it)
1/4 tsp ground cumin
1 tsp oregano
28 oz canned white hominy (posole), drained
4 oz canned green chile peppers


Saute onions & garlic in oil in large pot.
Add Pulled Pork. Stir in chicken broth, oregano, and
cumin. When it starts to boil, reduce and simmer for
30 minutes. Add the hominy and green chiles. Simmer for
another 30 minutes.


Toppings (Optional, but really make it better): chopped cilantro, diced avocados, green onions, crushed tortilla chips, grated cheese. Put the toppings in little bowls and let each person top their own soup.

MAKES 5 TO 7 SERVINGS
