these suggestions all sound good. I'd go for a little Pepperidge Farm stuffing in the mix. Or season some bread crumbs and add them to the other stuff.

Here is what I did. I diced up an onion and an apple and cooked that in some butter and evoo till tender. I toasted some pine nuts and added those to the pan. I poured in a little white wine and sprinkled on some seasoned bread crumbs. I forgot about the thyme until I was halfway through my dinner. These chops were a big hit with the family. Thank you everyone for your suggestions.
