My Mom's Pork Chops

Thin Pork chops - allow 2 per person or to appetite
Poultry seasoning
Garlic powder
Onion powder
Adobo seasoning
Accent
Salt and ground black pepper
Olive oil
Sauerkraut - bag - drained
Potatoes - peeled and cut into medium thick slices
Onion - sliced into thin half moons
2 pkgs. Pork gravy mix
Fennel seeds
Caraway seeds

Season chops on both sides with the spices to taste and brown well on both sides in small amount of olive oil in heavy pan (NOT a non-stick pan). Remove chops from pan. Add olive oil to pan if necessary. Sauté onions and potatoes till they pick up all the brown pieces from the pan. Add pork gravy mix to pan and 2 cups water. Whisk till smooth. Cook till gravy thickens. Add the drained sauerkraut, fennel seeds and caraway seeds and stir to combine. Add the chops to pan and bury under sauerkraut, onions and potatoes. Cover and simmer, turn chops occasionally, till chops are tender and potatoes are cooked. Add water to pan if gravy gets to thick.

oh chops with bones taste better in this recipe. not to mention sucking on the bones after LOL
 
I wish I had seen this earlier. I made barbecued pork chops for dinner tonight. I'll try it soon. We like all the stuff in the recipe, of course we like most everything.

SWEET! perfect! the only thing I don't have in the kitchen is the
pork gravy-easy enough to remedy since I have to run to the store
anyway. this will work great, thanks. oh, and while it looks like you
cook like I do (a dash here, pinch there, no measuring, etc) can you
give me an idea of what I need more of and less of? and will leaving
out the adobo change it too much? because Ella don't do adobo.
it was one of those things I was sensitive to while I was pregnant
and I never got over it!!

hmmmmm adobo seasoning has several spices in it and i use it out of habit. i wonder what bothered you? well the adobo is redundant of the other spices any way so sure leave it out sweetie.

I know 'adobo' as fire-roasted chiles. and I hate them.
is there a spice or spice mix called adobo?
 
yep. totally different items. the adobo I am familiar with is, as I said,
fire-roasted chile peppers. basically tastes like a chile flash-burnt with
liquid smoke and pretty much one drop of the crap will flavor a whole 8
quart pot of chili. or whatever else. nasty, evil stuff. avoid it.
and your chop recipe rocked! my husband totally loved it-that one's a
keeper!

My mom's Pork chops and sauerkraut.

I made these last night and wanted to update the recipe and add pictres.
Season and brown chops on both sides in a heavy pot pan (not NON stick).

After brown remove chops from pan.

Deglaze pan with a splash of White wine and liquid/juice from the sauerkraut. Strir well to loosened and desolve the fond on the pan. (i did this last night)

Add potatoes and onions. Stir the potatoes and onions well so they are coated with the loosened fond from pan.
Sprinkle the gravy mix packets over potatoes and onions. Add the water and stir well. Bring to boil then lower to simmer and thicken gravy slightly.

Add sauerkraut, caraway seeds, fenell seeds to the pan and stir well.

Add chops to pan and cover. Reduce heat and simmer.
After first 15 minutes stir potatoes, turn chops then bury the chops under potatoes. Stir potatoes and turn chops several times during simmering. Simmer till potatoes and chops are tender.
