We butchered two pigs the other day and my husband's family always cuts the back bone out, leaves the meat on them, then bakes them with sage, garlic, salt and pepper. They are truely heavenly! Could I save the cooked bones and boil them to make a stock? Would that work?

Yes, make a pork stock.
