Steve, we had a similar experience with my mil in her last years in having to reduce sodium in meals. Being Slovakian, ham was a staple for holidays for her.

I've found that in order to appreciably reduce the sodium, you must soak the ham and change the water about 3 times over the period of about 6 or 8 hours before cooking.

Osmosis is great, but it slows down as it works. You know, the whole transfer from higher concentration to lower concentration thing.

As far as older folks enjoying less salty food, well, that's another ballgame. As we age, so does our tastebuds. Something perfectly seasoned for a young person is often bland to an older one.

But good luck. The most important things are family, tradition, and effort.
