Spareribs in my new wood oven

Last week I threw in a large 6.5lb slab of spareribs into my new wood oven (not completely finished yet) using its residual heat from the curing fire the night before. I left it in there for almost 3 hours, uncovered. The ribs came out moist and tender.

Did you build the oven yourself? It's wonderful and I'm jealous...Enjoy it.

Thanks, I was pleasantly surprised at how well the ribs turned out. The oven itself is a lot of fun and I love cooking in it. It can pretty much do what my grills and smokers can do, plus more. Fire management is a bit difficult but I'll get the hang of it.

Thanks, yes I built it from the ground up and located it right outside my kitchen for easy access. It still needs a bit more shaping and then finish stucco work. It also needs several more firing/curing sessions before I can really crank up the temperature for pizza.
The oven started out with a simple concrete stand/hearth 3 months ago to the first small firing in the dome to the almost finished exterior work.
