Buffalo-Chicken Meatballs (This would also make an awesome meatloaf)
1 boneless skinless chicken breast
1/4 cup breadcrumbs
2 egg (yolk removed)
onions, garlic, etc.
Cook the chicken but not the buffalo meat.
Then combine both in a food processor along with the breadcrumbs and whatever veggies you decide you like in a meatball. After processing work in the egg whites with your hands being careful not to overwork (just get it to stick together).
Heat some olive oil and sear all sides, then place in a baking pan and bake at 350 for about 10 min. The chicken is already cooked and the buffalo is best served medium-rare, so I don't suggest baking longer than 10 min. and 5 minutes will probably get the job done depending on how well they were seared.
