Cheese With Venison Sausage
Hi everyone,

A co-worker of mine gave me three venison summer sausages to take with me on a camping/canoe trip this weekend. I was going to slice them all up and eat them with cheese on crackers.

I'm looking for recommendations on what kind of cheese would compliment the venison best, or even what crackers, if anyone has suggestions.

Well - for crackers, whole wheat are my favorite for something like this.

If the sausage is heavily smoked - a mild cheddar would be a good compliment - if you want something spicy then a pepper-jack would work.

If the sausage is lightly smoked - a hardier hickory smoked cheddar would be a good compliment.

But, those are just my favorites ...

Thanks, Michael. I was thinking a cheddar would work best. I'm not sure the "level" of smokiness.. it was processed at a local butcher. I'm sure it's something close to "average" LOL

We like Ritz Crackers and cheddar cheese. Or if you want something spicy, try a pepper jack. Or both!

Red Rind/Hoop Cheese...the kind you find in old country stores...Look for it in your favorite grocery, but not in the cheese case...Try the meat market, or maybe the deli...
