I took 7 lbs of course ground venison and 5 lbs of fatty beef chuck stk, mixed them together then fine ground for burgers. Venison has no fat at all so by adding the fatty beef chuck gives you a nice juicy hamburger. Great for meatloaf & meatballs too.

My roommates and I made deer sausage one year after one of them got a deer. We used beef fat for them and they were quite good. We used the Kitchenaid meat grinder and sausage stuffer attachment.

We had a friend that would make deer pepperoni.
 
I've used ground deer mostly for chili and spaghetti sauce.

Adding some beef is a good idea and I'll have to give it a try.

I usually get a few pounds a year from the guys I let hunt on my property so now I have something to look forward to this season. :)
