Made some smoked venison salami with Jalapeno's....

Looks good! Is the casing that cellulose stuff? What do you think about it? I've seen it in the sausage supply mags we get and have wondered.
 
What kind of fat,if any, did you use? Was it cured or fermented before being smoked? It does look really good.:yum:
 
Love me some good venison sausage. I'd bet the jalapenos put it over the top :yum:
 
Very nice. I'm looking for some venison ideas as we only recently tried it for the first time and liked it. This looks perfect for the smoker
