Trail Bologna

My amish neighbor used to can his meat with a pressure cooker, does anyone have any great recipes for ground meat so that it will be like a trail bologna? I just bought a new pressure cooker and am dying to use it. Oh, and by the way, I'd ask Sam but he moved away, greatest neighbor I've ever had 2, sniffle (

Welcome to DC Miss HRL...Being from the South I am well aquainted with bologna, but your term "Trail Bologna" has me stumped. Just what is it?

Wellll, I would say it's similar to spam or canned cornbeef, but made with venison, ground chuck, and or pork. Processed with a pressure cooker in ball jars...

Oh! Ok! Thanks for the info. I've never canned meat, so that helps explain why I've never heard of it. Sorry I do't have a recipe either. I do know that canning meat can be tricky, so whatever you do proceed with all due caution!!
