Wild Turkey cooking techniques

I smoked a wild turkey this Thanksgiving, and it was a bit dry, but delicious. I had plenty left over, which I chunked up and froze in packages. I've made a couple of great turkey noodle or turkey rice soups with it. Anyone have any great techniques utilizing the wild turkey?
