depends if I'm making a sandwich or having it with a meal

I'll say rolls, because I bought some really good wheat dinner rolls at the grocery store recently.

when making dinner... follow a recipe or don't measure anything

Usually don't use a recipe and even when I do most of them are a list of ingredents and maybe some techniqued/prep instructions without messurements.
