Southwestern Chicken Soup

2 lb boneless, skinless chicken breast cut into bite size pieces
3 quarts of Water
6 chicken bouillon cubes
2 cups salsa (use yr favorite kind)
1 6.8 ox box of Spanish Rice Flavored Rice -a- Roni

Put everything in a large pot. Bring to a boil. Boil for 3-4 minutes. Reduce heat Let in simmer for 15 to 20 minutes.
 
I am imagining this is a topic for 30 min soups? Well, if it isn't, I apologize, but I'm going to stick one here anyway.. lol

Manhattan Clam Chowder:

5 slices bacon
1 cup chopped onions
1 cup chopped celery
1/4 cup finely chopped gr pepper
3 cups water
2 cups diced peeled potatoes
1 cup diced carrots
1 tbsp chopped fresh parsley
1 tsp salt
1/4 tsp dried thyme
1/8 tsp pepper
3 (6.5oz) cans minced clams drained, reserving liquid
1 (16oz) can tomatoes, undrained, cut up
1 bay leaf

Cook bacon in large saucepan until crisp. Remove bacon from saucepan, set aside. Reserve 2 tbsp drippings in saucepan. Cook and stir onions, celery and gr pepper in reserved drippings until tender. Add water, potatoes, carrots, parsley, salt, thyme, pepper, reserved clam liquid, tomatoes and bay leaf. Bring to a boil. Reduce heat; cover and simmer 25-35 min or until vegies are tender.

Remove bay leaf. Stir in clams; heat gently, stirring frequently. Do not boil. Crumble bacon; garnish each serving with bacon. 6 servings.
 
Spicy Chicken Soup:

1/2 lb ground chicken or turkey
1/4 cup chopped onion
1 garlic clove, minced
1/2 tsp dried basil
1/8 tsp cayenne pepper
1 cup water
1 (10.75oz) can cream of chicken soup
1 (10.75oz) can condensed chicken broth
1 (16oz) can white cannellini beans, drained and rinsed
1 (4oz) can diced green chiles, undrained
1 cup frozen sweet peas
1 tomato, chopped

In large saucepan, brown ground chicken with onion and garlic; drain. Add remaining ingredients except peas and tomato. Bring to a boil; reduce heat. Cover simmer 30 min. Stir in peas and tomato; heat thoroughly..makes 5 servings.
