Question Baby Portobellas in Gumbo

Have any of you ever put mushrooms in Gumbo?

Not all gumbo ingredients are set in stone. You have flexibility.

I have some baby bellas to use up. I also have 2 big boys I'm going to grill and treat like burgers.

Depending on the gumbo, the actual mushroom flavor might be lost with the robust seasonings used. You never know until you try it though!

I think it depends on the meat..

if you are making chicken/sausage gumbo, it sounds fine..

but for seafood gumbo, I think the mushrooms would overpower the delicate seafood taste..

if you have a Lot of mushrooms, I bet you could make a Mushroom Gumbo!

could be the next new trend!

Sounds like a waste of perfectly good portabellas to me... but then gumbo has never held any charms for me. Now those burgers... that is an idea worth entertaining!
