Beef Rice and Veggies Soup
Beefy Rice and Veggies Soup
1 pound of cooked beef ( I've used hamburger and leftover roast cut into bite size chunks)
1 small onion
2 carrots diced
2 stalks of celery diced
1-16 oz cans of tomato sauce or diced tomatoes
2-3 potatoes diced
1 can green beans
2 cans Swansons Beef Broth
Salt & Pepper to taste.
I also add about 4 cloves of garlic to simmer in the crockpot.
1 1/2 c. cooked rice
CROCKPOT- Combine all ingredients except rice and cook on low for 4-6 hours. Add rice for last 1/2 hour.
Stove top: Combine all ingredients except rice and cook on Med-High until veggies are edible. Add rice for last 5-10 minutes. Pretty much just to heat it up.
