Bread Dumpling Soup

This soup is good with either meat or chicken stock. I like the meat best.In a lge. bowl place 4 cups of whole wheat or seedless rye pour over the bread 1 cup of milk. soak for 30 min. stirring now and again til bread begins to crumble. In a small skillet melt 2 Tab. butter add 1/2 cup minced onion, cook til golden about 10 min. Scrape the onion into the bread and add either finly chopped Mortadella or salami, about 3 oz. 2 beaten eggs,2 Tab. chopped fresh chives or parsley or 1 tab. of eachsalt and papper. Stir in enough orf 1 cup of flour a little at a time so the mixture will just hold together.Let stand 10 min. moisten your hands with cool water.scoop up about 1.4 cup of the mixture sape it into a ball.Roll in flour place on a piece of wax paper Repeat with rest of mixture. Bring a pot of water to boil. reduce it to just simmering. Drop in the dumplings just enough of them so they are not crowded. Cook 10-15 min. or til the dumpling are cooked through. With a slotted spoon transfer the dumplings to a plate.When ready to serve the soup,heat the stock a simmer add your dumplings and heat about 5 -8 min.Serve the dumplings in the stock sprinkle with grated cheese.
