Have any left over bread Italian of course how about 8 cus beef broth bring to a boil Reduce heat cook uncovered 20-30 min. Stir occasionallyif soup looks too dry add 1-2 cups more broth. season with salt and pepper Add 3 Tab. butter and 2 Tab. evoo plus 2 sage leaves either fresh or dried.cook 5 min longer now stir in 1/3 cup grated parmesan Taste for seasoning serve at room temp or hot serves 3-4 depending on appitite:) You can add more parm if you wish

Sounds good! I usually go the panzanella route with stale bread but, I will give this a try.
I do that at times but when i've no sweet juicy tomatoes it's soup I really love this soup when the kids are sick I whik in some beaten egg and keep swirling it til it sets. It seems to help them relax and I have toadmit they love it.
