Cream of mushroom soup

Here is my first attempt at cream of mushroom soup and i must say it it very tasty:)

Cream of Mushroom soup

Ingredients:

500g button mushrooms chopped.
2 medium onions chopped.
2 cloves of garlic chopped.
100g butter
2 tbsp flour
1tsp thyme
1 litre chicken stock
5 floz cream

Directions:

Melt the butter in a saucepan

Add the chopped garlic and onion and cook until soft but not brown.

Add the mushrooms and stir well cooking on a high heat for 3 minutes.

Add the flour and thyme making sure all the mushrooms are coated in flour. Add the chicken stock.

Simmer and stir occasionally for 10 minutes.

Allow to cool.

Liquidize in a blender then add to saucepan again.

Bring to boil stirring all the time and add cream and season with salt to taste.
Serve with some crusty bread. Decorate with some croutons and/or chopped fresh parsley.
