I was just posting on the "appetizers" thread under Avocado, as InTheKitchen had asked for Avo Soup. After I typed out my version, I noticed that next to it is another goodie...so I thought I'd share it with you...

Creamy Almond Soup

6 c. chicken stock
½ lb. ground toasted almonds
1 c. Half & Half
4 egg yolks
salt and pepper
chopped parsley (or whatever you have)
sliced almonds

Bring stock to a boil. Add ground almonds & simmer 15 minutes. Beat together half & half with egg yolks. Whip the mixture into the stock & remove from heat. Season to taste with S&P. Garnish w/parsley & almonds.
 
And almonds are sooooo good for us - we'll just pretend the half and half isn't in there ;) This sounds like a great soup course for a winter meal!!! Thanks jkath - you are a pleasure to have around.
 
jkath - I changed your recipe structure - it must have been in 2 columns when you copied and pasted it - it was hard to understand. Just look at the ingredients and make sure I didn't miss anything - thanks!
 
yep - that's it - sorry about the 2 columns! I have a habit of typing that
way, as that's the way my brain works! (and if it's working, I can't complain!)
The soup really goes with everything from Chinese to Turkey dinner!
 
Thanks jkath - I guess this program doesn't recognize the columns - it just put them side by side with no spaces - thanks!!!!
