When my friend first told me about this soup I thought eeeeek salt. Yes it has some and I feel it needs some. So I gave this a try any my girlrs and the kids loved it. Go figure.
Add one large grated onion and one unpeeled and grated tart apple to 3-10-1/2 oz. I usecans of beef consomme . cook about 12 minutes. Til tender. Blend in your blender then put through a strainer. Stir in 1-1/2 cups heavy cream and season with 1/2 tea. paprika and 1/2 tea. curry powder. Refrigerate til ready to serve. Reheat slowly til just heated through. Serve in small cups topped with unpeeled and chopped apple and some lemon juice about 2 tablespoons.
