Dawg's Mexican-style Black Bean Soup

We did a Costco foray last week, most of the ingredients are from there.
This turned out really good. Let's see if I remember how I made it.

1 C chopped vegetables (my freezer soup mix, equal parts chopped onion, celery, carrot, and peppers if you have them)
3 cans black beans, rinsed and drained
2 cans Rotel (seasoned chopped tomatoes and peppers, US brand name)
2 boxes Chicken Stock
2 palmfuls Bacon Bits
2 T ground cumin (I ground whole cumin in the spice grinder)
1/2 C barley (optional)
1/2 C frozen corn (optional)
1/4 C cilantro ((optional)
Squirt Tabasco Chipotle sauce
Juice of one lime
1 large bay leaf

Saute veg in 1T oil (I used coconut oil). Add 1 1/2 boxes chicken stock, Rotel, beans, cumin, bay leaf, cook on medium high for awhile, stirring frequently. Smush beans a bit with a potato masher. Add the bacon bits. Cook some more. Throw in the barley and corn if using. Remove bay leaf. Cook some more, stirring occasionally. Squeeze in lime and add Chipotle Tabasco and cilantro. Add remaining chicken stock and cook a bit more.

You might serve with a dollop of sour cream, crushed corn chips or Tostitos, and sliced scallions. Or not!
