I am planning a party on Labor Day weekend and will be serving Gazpacho. It is going to be blended in my food processor. Think it'll freeze well? I will add garnishes of diced veggies just before serving as well as a shrimp garnish.

I would love to have it made ahead of time.
Thanks for any input.

I always make gazpacho ahead of time - usually 2 days before we eat it for the simple reason that as it sits in the fridge, the flavors meld and the soup becomes rich and very flavorful. I wouldn't advise making it sooner than 2 days but it's so easy to make you can do this with ease. Just before serving I top the soup with a couple of tablespoons of chopped FRESH cilantro and a couple of squeezes of lime juice. Out of this world!!!
