Served in ice cld soup cups with tiny biscuits and a tangy iced drink...Ahhh summer afternoons...
Iced Avocado Soup
6-avocados
5-c. chicken stock
2-c. light cream
3-4 Tab. fresh lime juice
Dash or 3 of Tabasco
Pinch of cayenne pepper
salt and fresh black pepper to taste
Thin slices of lime
cilantro springs
Puree avocados with chicken stock in f/p or blender. Combine with remaining ingredients, blending well with a whisk. Chill.
Serves 8
Prep time about 10-12 minutes.
Serve in chilled soup cups and garnish with a slice of lime and a sprig of cilantro
