I have a whole lot of frozen broad beans (I think some people call them lima beans) No one else in the family likes them served on the side so I was thinking of making a soup with them?

LIMA BEAN AND HAM SOUP

1 lb. dried limas
Sm. ham bone with meat
2 c. diced onion
2 c. diced carrots
4 strips bacon, diced
Salt and pepper to taste

Saute bacon until brown. Add onions and continue to saute until clear. Add carrots, beans, and ham bone. Cover with water. Simmer approximately 3 hours until beans are tender and soup thickens. Extra added water may be needed in the course of cooking. Remove bone (note: Meat should fall from bone). Salt and pepper to taste. Serve with seasoned homemade croutons.
