Marinated Artichoke Hearts

Marinated Artichoke Hearts

1 dozen artichoke hearts
1/2 c. EVOO
3 Tbsp vinegar: can be sherry, balsamic or cider
4 tsp. of any fresh herb, chopped well
1/4 c. sliced green onions
Pepper and salt optional

Fill a kettle with water, allow it to boil and add salt. Cook until tender. Drain, and let set until cool.

Mix remaining ingredients together in a bowl. Pour over artichoke hearts.
