Thanks everybody. It was fun. Turned out pretty good, except that I got a bit overzealous when finishing the soup. I let it reduce a bit too much and there wasn't as much broth in the bowls, under the cheese as I would have liked....I should have stopped a little earlier, or added a bit more beef stock to thin it out. Either way, the flavor was awesome.

I am off work until spring so there may be a few more of these threads coming down the pike...
