soup for health nuts
I normally dislike tofu, but this soup is delicious and great for those who are lactose intolerant.
Potato Tofu Soup
Put into large pan:
5 russet potatoes, peeled, and chopped into chunks
1-2 carrots (cut into small chunks)
1 small onion(cut into small chunks)
3 cloves garlic, preferably roasted first (chopped)
water-just enough to cover veggies
Whole sprig of rosemary OR 1 T. fresh parsley
Cook until tender, about 15 min.
Remove rosemary and add:
3 more cloves garlic
1 box silken tofu
Puree in blenderk until very smooth. Careful not to spill, it will be hot! Ladel into bowls and add mince rosemary OR a bit of parsley on top.
