I made some veggie stock earlier this week. Today's soup is:
chickpeas (debated using lentils, but I love chickpeas...)
3/4 c homemade Kimchi
Swiss Chard stems (didn't have any celery)
thyme, rosemary, bay, freshly ground pepper
Green beans, kale, and Swiss Chard added 5 minutes before calling it "done."
