This soup is a great way to use up that turkey carcass you may still have from Thanksgiving.

TURKEY BARLEY SOUP

8 cup(s) TURKEY STOCK; Made From Leftover Turkey Carcass.*
1 small ONION; Diced.
1 cup(s) CELERY; Diced.
2 cup(s) CARROTS; Diced.
1/2 teaspoon(s) BASIL
1/2 teaspoon(s) MARJORAM
1/2 teaspoon(s) SAGE
SALT; To Taste.
BLACK PEPPER; To Taste.
3 cup(s) TURKEY; Leftover, Diced.
3/4 cup(s) PEARL BARLEY

In a large pot add all ingredients.
Bring to a boil; reduce heat.
Cover pot and simmer for 45 minutes or until barley is tender.


*Can use chicken stock

Mmm I LOVE barley! Too bad I have no Thanksgiving leftovers! :(
But I will definately be saving this for future use, maybe with a chicken....Thank you!:chef:
 
i have used barley and i love it. today however i used rice in the turkey soup i made. pretty much same ingredients , added celery, and whole baby green beans and assorted bell peppers. then the recipe called for one can of cream of chicken or mushroom soap at the end. am anxious to try it.
 
Barley is a great starch that holds up well in soup over time.

I'm going to make my turkey soup tomorrow, and was going to add egg noodles. But they don't freeze as well as barley.
