Turkey Stock - No Scum

lol andy. i guess they were turkeys from the right side of the tracks. or would that be road? do turkeys cross roads, or is that only a chicken compulsion? gotta ask pdswife.

i sure hope you don't let anyone else cook in your kitchen. you never know if they'll rummage around your pantry for stuff to put in their stock...

gb, i've done that before, made stock with little or no scum. i kept waiting for it to rise so i could scoop it, but it never appeared. the stock turned out ok.
 
Well the stock turned out great so I am not concerned that there was no scum. It is probably my best stock ever actually so maybe no scum is a good thing. Sure sounds like it on the surface at least. Who likes scum :LOL:

auntdot,as far as I know it was neither a kosher turkey nor brined. I also threw in some raw wings that I bought separate that were not kosher or brined.
