Vegetable and Apple Soup

2 to 3 inner stalls of celery with the leaves, about 1 cup once it's chopped
1 small onion (a little smaller than a tennis ball but a little bigger than a golf ball), diced
1 to 2 cloves garlic (or to desisred taste), chopped
1/2 cup diced sweet potato
2 golf ball size golden potatoes (or one little larger potato), skins on and diced
1/2 large red delicious apple, diced
1/2 tsp ground ginger
2 tblsp parsley flakes
2 tblsp dried chives
2 tsp soy sauce (more or less to taste)
1 pint chicken broth

Add all ingredients to a medium size pot. Bring to a low boil and cook until sweet and golden potatoes are tender. Use a stick blender or put soup in a standard blender/food processor and blend until smooth. Serve with sliced apple pieces from the other half of the apple as garnish.

Sweet potatoes are now available all year. Used to be just during the colder months. I think I should give this a try. Thanks.
