Zippy Rotel and V-8 Cabbage Soup

Zippy Rotel and V-8 Cabbage Soup

1 whole head of cabbage, chopped
1 c chopped carrots
1 c sliced mushrooms
1 c chopped bell pepper
1 c chopped onion
1 c chopped zucchini
1 can (15 oz) Rotel tomatoes - I use the HOT version

1 small can of diced tomatoes with jalapeno peppers
1 packet of Lipton onion soup mix
1 can of lima beans
46 oz bottle of V8 juice
cayenne pepper, salt and pepper to taste.


Combine all ingredients in a large stock pot, covered, and simmer and stir
occasionally until vegetables are tender and flavors blend to your liking.

Can I go with white beans instead of the Lima beans?........LOL

My wife has slowly become a part time vegetarian. If not for me, she could go without meat altogether.
I would like to find some vegetarian meals I could enjoy as well. This dish sounds like a winner. A good start......Thanks

I don't know why, but lately I am finding it more difficult to eat meat. I seemed to have lost my taste for it. So I can identify with her. Give me a nice big bowl of broccoli or spinach instead.

During the last large grocery order, Pirate picked up two beautiful 2" center cut pork chops. This is the second time he has done that. I gladly let him have mine.

Looks good LT! I do something similar with the addition of sausage. I'm such a carnivore.
