these are very generic terms. Stew from the cooking technique and casserole from the cooking dish. Beef Burgundy and Carbonade a la Flamande are both stews (beef stews to be exact) and tuna noodle bake and shepherds pie are casseroles. It matters very little whether you use fresh or left over ingredients. If it tastes good, eat it!
