Post Blackeyed Pea Cornbread Dinner

Blackeyed Pea Cornbread Dinner
Ingredients:
1-lb. Ground beef
1-Chopped Onion
1-15oz. Can blackeyed peas w/jalapenos
1-14oz. Can Creamed corn
1-Cup shredded cheddar cheese

MIX TOGETHER-DRY
1-Cup Corn Meal
1-Cup Flour
1-Tsp Salt
1-TSP Baking Soda

MIX TOGETHER-WET
1-Cup Buttermilk
1/2-Cup Veg. Oil
2 Eggs

Recipe:1. Brown ground beef & add onion
2. Mix wet ingredients together
3. Mix dry ingredients together
4. Mix wet and dry ingredients together, and add the blackeyed peas, creamed corn, and meat
5. Add 1 cup of cheddar cheese
6. Pour into a greased 9x13 casserole dish
7. Bake @ 350 F for 45 to 60 minutes
8. It is done when you can stick a toothpick into the center, and nothing sticks to

I will! I may have to use plain black eyed peas though since hubby dosen't handle jalapenos very well.

Just wanted to let you know how this turned out. I thought it would have been better with the black eyed peas with jalapeņos but hubby thought it was perfect with the plain ones. He suggested making it with sausage instead of ground beef. Anyway, this one is a keeper! Oh, I topped it with grated cheddar cheese too.
