Ground beef and potato hotdoshes

Ok, I still have problems calling a hotdish a casserole. It must be a regional thing. Anyhow, picky carnivore hubby will eat potatoes, corn, onions and tomatoes. I have a terrible time making casseroles he will eat due to his fear of possible "vegetable poisoning." I came across a version of the following and he actually ate it. My version has lots of meat.

2 lbs ground beef, browned
4 fist sized potatoes, sliced thin with skin
2 cans Mexicorn
28 oz can diced tomatoes
Garlic or garlic powder to taste ( lots and lots!)
1 onion diced
Salt and pepper
8 oz.Mexican style shredded cheese

Brown beef with onion. Put potatoes in 9x 12 pan and microwave for 6 minutes if desired to speed up baking time. Mix all ingredients in the 9x13 pan except cheese. Bake at 375 for 45-60 minutes, longer if potatoes weren't microwaved a bit. Check potatoes for doneness. Sprinkle with cheese and bake til melted. Makes at least 6 big servings.

Additional spices could be added, but when I'm in a hurry simple is best. I think this would work well in a crockpot, too. Regular corn could be used, but then I'd add green pepper. Taco seasoning might be good in the meat also.
