REC Wild Rice and Chicken easy casserole
I kind of made this one up tonight...
I was also out of creamed soups so I made that too. 1 box long grain wild rice with seasoning (Uncle Bens) 1 can (12 oz or so) chicken breast chunks (or use fresh if you prefer) 1 can cream of celery soup Celery Bread crumbs Butter Preheat oven to 350. Butter a 2 Q casserole dish. Make rice according to box. Mix rice, chopped celery (how ever much you want), chicken and soup. Pour into casserole dish and bake for 30 minutes, covered. Add fresh bread crumbs on top. Pour 2-3 T melted butter on top of bread crumbs. Bake 5-10 mins longer, uncovered, until crumbs are golden brown. My own cream of celery soup: 2 T butter 3 T flour 1/2 C chicken broth 1 C milk Chopped celery Salt Pepper Onion powder Melt butter in sauce pan. Add butter and cook until bubbly. Slowly add broth and milk, a little bit at a time, mixing until smooth. Add celery, onion powder, salt and pepper. Cook until bubbly. I'm sure you could do a ton of add ins to the casserole. |
