I am making corned beef and cabbage for just the 2 of us tomorrow. I had a recipe for a reuben casserole that I can't find. Have any of you made this? Need to use the leftovers and thought this would be a good way.

Thanks

The Reuben casserole I am familiar with uses chicken breasts! :ermm::ohmy::LOL:

Salt and pepper 4 boneless skinless chicken breasts, top with a 16 ounce pouch of sauerkraut that has been rinsed and squeezed dry, top each breast with a slice or two of Swiss cheese, cover and bake in a 350 degree oven for 35 to 40 minutes, remove cover and bake 10 to 15 minutes longer, top with thousand island dressing and serve.
