Sausage Cheese Grits Casserole- TNT

4C. water
1/2tsp. salt
1C. quick cooking grits
1 1/2C.(6oz) grated sharp cheddar cheese, divided
1/4C.(1/2 stick) butter or margarine
4 eggs, lightly beaten
1/2C. milk
1 pound(16oz) sausage, browned & drained

Preheat oven to 350F & grease a 3-quart baking dish. In a large saucepan, bring water & salt to a boil. Slowly stir in grits. Cover pan & reduce heat. Cook for 5 minutes, stirring occasionally. Remove from heat. Add 1C. cheese & butter, stir until melted. Add eggs, milk, & sausage; mix well. Pour mixture into prepared baking dish & sprinkle with remaining cheese. Bake for 1 hour or until cheese is golden brown. Before serving, let cool for 10 minutes. Serves 6-8.
 
Crews, We are big grits-eaters (gawd, sounds - wierd, dunn'it?), and I can make this for DH and DS with the veggie sausage! TY!
 
Hope y'all enjoy it! We had it for breakfast this morning & the kids ate it like there's no tomorrow!:LOL: I'm thinking about playing with the meat & cheese some though. Maybe ham with swiss or bacon & keep the cheddar.
