Stampede Casserole

4 cups boiling water
1 1/2 cups wild rice
3 cups chicken broth
1 crumbled bay leaf
1 tsp soy sauce
1/2 tsp curry powder
1/2 cup butter
1 large onion chopped fine
1 lb mushrooms sliced fine
1 lb ground beef
1/2 - 1 cup grated sharp Cheddar

Pour boiling water over rice and let stand 15 - 30 minutes. Drain, add chicken broth, bay leaf, soy sauce, curry (I omit the curry) and salt to taste. Melt butter in pan and saute onions and mushrooms. Add the beef and cook. Add rice mixture when the beef is brown and pour it into a casserole dish. Top with grated cheese. Bake for an hour at 350. Serve hot.
 
This sounds great Alix. Wonder where they got the name?

Its a popular dish served during the Calgary Stampede apparently. When I lived in Calgary I never had it served to me. The only thing served to me at Stampede was in liquid form!!

Lefse, maybe I posted it before and you did? I can't remember!
