Thumbs up Taco Potato Casserole

This would be great made in the Dutch oven. My son thinks green peppers would be good in this.

Taco Potato Casserole

4 medium POTATOES; Peeled And Thinly Sliced.
1 pound(s) GROUND BEEF
1 package(s) (1.25 ounce) TACO SEASONING
3/4 cup(s) WATER
2 cup(s) CHEDDAR CHEESE; Grated.

In a skillet; brown the ground beef.
Drain off any fat.
Add taco seasoning mix and water; stir well.
Add potatoes and 1 1/2 cups cheese to ground beef; mix well.
Place meat and potato mixture into a greased 13 x 9 pan.
Sprinkle top with 1/2 cup of remaining cheese.
Cover pan and bake at 350 degrees for 35 to 45 minutes or until potatoes are done.
Stir meat and potatoes and serve with additional grated cheese if desired.
Serves 4.

Great recipe.

The first thing that jumped into my mind was to add olives, yep, the green Spanish olives in the jar.

I think it would work, but then again I could put olives on corn flakes.

OK, OK, an exaggeration but not much of one.

Just an idea.

This sounds good. I would add green peppers, onions and garlic and a handful of chopped cilantro. I'd serve with sour cream and salsa.

Oh yes! And green chilis too! But "as is", just the way you posted, would be wonderful! Like someone said in another thread, you know you've posted a good recipe when we start adding to it and changing it - it's so true! Everyone gets excited!!!!

I have to agree with you kitchenelf. I would love to be able to add some green chilies and all the other suggestions, but my husband is such a picky eater.
