For authentic Italian you dont haft to go to Italy until you are ready to go.Meantime I would reommend some books Italy, A Culinary Journey this book is great it breaks down the dishes by each region it also has beautiful photgraphy.Another one that just came out I have it by Jamie Oliver its called jaimies italy he travels Italy to learn the local dishes and lastly maybe something from Mario Batali he also does authentic Italian.
There are many more maybe someone here can recommend some more.

Benvenuto Italy!

There are a few members here that live/have lived in Italy so I am sure you will get heaps of info from them. Just ask specific questions and all will be revealed!!
