Hello and welcome to DC! And to answer Picantis' question, it was always my understanding that a sous chef ran the kitchen when the chef was out. The chef comes up with the recipes and the sous chefs follow em?
Or maybe I shouldn't take any directions from 'Ratitoulle'?
