Newbie Hello

My name is Linda, I am English, living in the US for 20 years. I have cooked since the age of seven and was taught by my mother to cook all kinds of food. By the age of ten I could cook five course meals for our family of ten, I love creating good meals and like to grow my own veggies as much as possible. In spite of no formal training, I have run a restaurant including cooking, after my friend the owner, saw the chef drop a chicken on the floor, then wipe it off, portion it and put it in a patron's plate. So I took over while he looked for new staff. It was small (30 covers) and not much different from cooking for our family and friends and cleaning to my mother's standards. It made me appreciate how hard chefs work, compared even to cooking for our ever stretching family. I had never really thought about it before. 12 hour days plus going to the market. Making sure those who helped, helped and keeping track of everything. Loooong days - rare breaks.
