What is an emulsion

Hi I am a relatively new cook. The company I work for is very small and the chef just quit, leaving me as the only person with a little experience but I need help. A couple of our recipes call for emulsifying and I think you use a food processor but not quite sure. If you just whisk everything together will it be the same? One of the recipes is for a coleslaw dressing, mayo, rice wine vinegar, and spices. Any help would be appreciated. Thanks!:rolleyes:
 
An emulsion is a mixture of substances that resist combination. E.G. water and oil. It is achieved by using a substance like mustard powder which acts as an emulsifier and facilitates the suspension of tiny droplets of oil in a water containing base (e.g. vinegar).
