keen kook, I would be happy to hook you up with the 4H beef...I am not sure how well it would translate in the US, but here you are responsible for butchering and hanging your own beef once you purchase your steer. So...you can specify a hanging time with your butcher. That might get closer to the beef you have at home.
Oh, and all the cattle I bought were range fed.

I am prepared to pay for quality. I fear that the mighty dollar has blinded many meat producers to this simple fact: meat is a consumable so it really DOES matter what is done to it! It is not a cheap sweater or a secomd rate kitchen gadget - it is contributing to our health and well being.
