Honey Balsamic Glaze

4 cloves garlic, minced
1 tablespoon finely chopped fresh rosemary
1/2 cup balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon molasses ( optional)
salt and freshly ground black pepper to taste
Combine all ingredients set aside....
For the pork:
1-3/4 to 2lb. pork tenderloin
corn oil or peanut oil for searing
Slice the tenderloin inot 1 inch thick medallions..Place in lightly oiled skillet and heat til lightly brown but not done through. Remove from pan and place into a shallow baking dish in a single layer
Pour glaze over tenderloin and roast in a pre-heated 350 oven about 10 min or til hot through..

Pds, it's good on chicken too, but, I cut the amount of mustard down a little, say half a Tab. I like Dijon, but, not a heavy helping of it..Of course If you enjoy it go with it as is.:LOL:
