Here's one I've used. It's not spicy hot, but that's easy to fix. Just add some cayenne, or, if you're a pepper-head, some diced fresh habaneros.
Jerk Marinade
Yields: ~1 c
½ t Thyme
1 t Salt
2 t sugar
1 t Ground Allspice
½ t Ground Cinnamon
1 t Cayenne
1 t Ground Black Pepper
3 T soy sauce
1 T salad oil
1 T Cider Vinegar
¼ c Herbs de Provence
Mix all ingredients together. You may need more oil. Store in a non-reactive container.
