So today I was playing around with a recipe for Piperade sauce. Piperade is a Basque style tomato and pepper based sauce, with many different versions out there. It can also refer to an egg based dish as well. The recipe I got was:

Spanish Onion
Green Bell Pepper
Garlic
Tomato
Chili Flakes
Paprika
Extra Virgin Olive Oil
S&P

Pretty simple, but a little one-note in flavor. My version consisted of:

Red Onion
Garlic
Fennel
Red Bell Pepper
Tomato
Roasted Serrano Chilis
Smoked Paprika
Sherry Vinegar
Kosher Salt
Extra Virgin Olive Oil

I liked the acidic component of the sherry vinegar, which is probably my favorite all-purpose vinegar to use. The piperade was then used in a special:

Pan Roasted New Zealand King Salmon and Atlantic Diver Scallop
Crispy New Potatoes, Piperade Sauce, Horseradish Foam
