Roasted Garlic Tartar Sauce

Ingredients
Two heads garlic, unpeeled (you will need 1/2 cup roasted)
1-1/2 cups mayo
1/4 cup sweet pickle relish
1 Tbsp diced onion
1 Tbsp diced red bell pepper
1 Tbsp diced green pepper
1 Tbsp whole grain mustard
2 Tbsp white wine
1/8 tsp kosher salt
1/8 tsp grnd black pepper

Cut the top off of each garlic head, place in a garlic roaster or wrap in aluminum foil. Drizzle some olive oil over each head and seal package. Roast in oven (minimum 350F) until garlic is soft. Let cool and squeeze out softened garlic and mash to a paste like consistency. Combine garlic with remaining ingredients and refrigerate until ready to use.
 
Be careful with the liquids, i.e. the juice from the relish and the white wine, otherwise the tartar sauce will be very thin and runny.
